Winter is here, and let's face it many of us hibernate. We look forward to those cold blustering days where we can curl up by the fire with a steaming bowl of comfort, we call "soup".
You will need;
1 tablespoon butter
2 tablespoon olive oil
2 med anise (fennel)- remove core- slice into bite size bits- chop off top - dice and save for garnish
1 med red onion diced
2 med sweet potatoes(peel and cut into squares)
1 cup zambuca
3 cups whole mile or half & half cream
2 cups de veined med size shrimp
1 1/2 cups grape tomatoes- whole
salt & pepper to taste
toasted naan bread or pita bread ( brushed with olive oil or butter)
1) Saute in butter & olive oil- onion, sweet potatoes, anise- low -med for 10 minutes- stir often- you need to soften the anise- do not brown the onions - carmelize them
2)turn up heat to medium and add 1 cup zambuca & shrimp- stir often- 5 minutes
3) add salt & pepper to taste
4)add cream simmer for 10 minutes on medium heat
5) add grape tomatoes whole- simmer for 5 minutes on medium
toast naan bread brushed with olive oil in 350 degree oven.- toast 3 minutes- want soft and warm- slice into triangles
fill bowls with garnish & pepper- serve with warm naan bread- YUM YUM- you will love this soup! Enjoy! Looking forward to your feedback
